Small (0.30 to 0.39 lbs): Ideal for lighter meals and smaller appetites
Medium (0.40 to 0.49 lbs): Perfect single-serving portion.
Large (0.50 to 0.59 lbs): A generous entree cut.
 
Cooking Tip:
Best prepared rare to medium rare. Coat with olive oil, garlic, salt, and pepper.  Sear over high heat for 2 minutes on each side. Let rest for a few minutes.  Bison cooks faster than beef due to its lower fat content.
